Batchcooking with a Thermomix – menu 2 (Slimming World friendly)

Batchcooking with a Thermomix Time: 1.5 hours

Get: 5 meals for 4 people, made from scratch, using only fresh ingredients.

Each meal will then take 5 minutes or less for you to prepare

(plus unsupervised cooking time of no more than 30 minutes)

Before we start: This menu is fully flexible. There might be something in there you don’t like. You might be going out 3 times this week (lucky you!) etc. Each ingredient and each cooking step has the recipe it belongs to next to it so you can easily take it out if you decide to remove one (or more) of the recipes.

The ‘>>>’ indicates steps you can get on with whilst waiting for stuff to cook.

On the menu this week we have:

Chicken and chorizo jambalaya

Lemony fish pie

Mary Berry vegetarian lasagna (V)

Spaghettis with chunky beef raguΒ 

One pot creamy mushroom pasta (V)

Before you begin batchcooking with a Thermomix you will need:

(aff links are to the ones I use over and over again)

  1. A clean Thermomix, turned on
  2. 4 x 3L airtight containers. 1 x 1L size airtight container.
  3. 1 oven dishΒ 
  4. 2 spatulas
  5. 1 potato peeler
  6. 2 chopping boards – one for meat, one for veg.
  7. Weighing scales
  8. 2 sharp knives – one for meat, one for veg
  9. 4 small bowls to keep chopped ingredients as you prepare them
  10. A clutter-free space to work
  11. All your ingredients out (you can tick them off online as you go along)

  • CHUNKY BEEF RAGU Peel and halve 1 onion and 1 garlic clove. Roughly chop 2 courgettes. Half and de-seed one yellow pepper. Add all to the TM bowl. Chop for 5 seconds / speed 5. Scrape down the sides. Add 3 sprays of Fry Light and cook for 5 minutes / 100C / speed 1.
  • CHUNKY BEEF RAGU Add 2 tbsp soy sauce, 1 tbsp dried oregano, 2 cartons chopped tomatoes with garlic and onions and salt & pepper to taste.
  • CHUNKY BEEF RAGU Insert your simmering basket into the bowl and put 500g beef mince inside. Cook for 10 minutes / 100C / Speed 1.
  • FISH PIE Boil a pan of salted water. >>>> Peel and chop 500g potatoes. Cook them in boiling water with 2 garlic cloves for 20 minutes
  • CHUNKY BEEF RAGU Break up the mince with a spatula, cook for a further 10 minutes / 100C / Speed 1.
  • CHUNKY BEEF RAGU Mix the cooked mince and the sauce together. Leave to cool and store in the fridge for up to 3 days. Quickly rinse your Thermomix bowl.
  • MARY BERRY LASAGNA Make a cheese sauce: add 150g reduced-fat cheddar to the Thermomix. Grate for 5 seconds / speed 5. Add 1 tsp mustard powder, 1 tbsp garlic granules, 1 tbsp onion garlic, 250g Quark cheese and 20cl milk. Mix for 20 seconds / speed 7. Set aside and rinse the Thermomix bowl. Preheat your oven to 180C.
  • MARY BERRY LASAGNA >>>> Slice 2 courgettes, wash and quarter 500g button mushrooms, peel and halve one onion and peel 2 garlic cloves.
  • MARY BERRY LASAGNA Add the onion and 2 garlic cloves to the Thermomix bowl. Chop for 5 seconds / speed 5. Scrape down the sides. Add 3 sprays of Fry Light and cook for 3 minutes / 100C / speed 1.
  • MARY BERRY LASAGNA Add 500g button mushrooms, whole, 2 courgettes, sliced and 2tbsp plain flour. Cook for 5 minutes / 100C / Reverse speed low.
  • MARY BERRY LASAGNA Add the baby leaf spinach, 400g chopped tomatoes, 1 tsp sugar, and salt & pepper to taste. Cook for 15 minutes / 100C / Reverse speed low without measuring cup. Set aside and rinse your Thermomix bowl.
  • MARY BERRY LASAGNA Assemble - Spread a third of the vegetable sauce over the bottom of an ovenproof dish. Spread a third of the bechamel/cheese sauce over the vegetables. Cover with a layer of lasagne sheets, not overlapping them. Repeat the layers of vegetable sauce, cheese sauce, and lasagne sheets, then repeat the layers once more, finishing with the cheese sauce.
  • MARY BERRY LASAGNA Bake for about 30 minutes or until golden brown. Leave to cool and store in the fridge for up to 5 days.
  • ONE POT PASTA Add 30g flat-leaf parsley, >>>> 2 garlic cloves, and >>>> 2 shallots to the Thermomix bowl. Chop for 5 seconds / speed 5. Scrape down the sides. Add 3 sprays of Fry Light and cook for 5 minutes / 100C / speed 1.
  • ONE POT PASTA >>>> Wash and slice 250g mushrooms and add to the Thermomix bowl. Cook for 5 minutes / 100C / reverse speed 1.
  • ONE POT PASTA Transfer to an airtight container with 350g penne pasta. Keep in the fridge for up to 3 days. Quickly rinse your Thermomix bowl.
  • FISH PIE >>>> Peel 4 carrots, roughly chop them and add them to the Thermomix bowl. Chop for 6 seconds / speed 5.
  • FISH PIE Transfer the carrots to the lower tier of the Varoma. Add 600g fish to the top tier of the Varoma. Rinse and fill the Thermomix bowl with 350g water. Cook for 20 minutes / Varoma / Speed 1
  • FISH PIE When done, flake the fish in an ovenproof dish, add the cooked carrots, 4 tbsp light Philadephia and the juice of 1/2 lemon. Mix everything together.
  • FISH PIE Empty the water from the Thermomix bowl. Drain the potatoes and add them to the Thermomix bowl with 200g skimmed milk, salt and pepper. Mix for 20 seconds / speed 4. Spread the potato mash over the fish. Sprinkle with grated cheese. Keep in the fridge for up to 2 days. Wash your Thermomix bowl.
  • CHICKEN AND CHORIZO JAMBALAYA Cut 400g chicken thighs. Mix with 100g prawns and 1 tbsp cajun spices. Set aside in an airtight container. Slice 150g cooking chorizo. Set aside.
  • CHICKEN AND CHORIZO JAMBALAYA Peel and halve one onion and peel 2 garlic cloves. Chop for 5 seconds / speed 5. Scrape down the sides. Slice and add 1 red pepper and a few sprays of FryLight and cook for 3 minutes / 100C / speed 1.
  • CHICKEN AND CHORIZO JAMBALAYA Transfer the peppers to an airtight container. Add 500g water, 1 chicken stock cube, 1 tin plum tomatoes, the sliced chorizo and S&P to taste. Keep in the fridge.
  • On the night...
  • CHICKEN AND CHORIZO JAMBALAYA Add 250g long grain rice to the simmering basket. Transfer the chicken and prawn mix to the Varoma. Transfer the pepper / tomato sauce to the Thermomix bowl. Put the simmering basket and Varoma. in place and cook everything for 22 minutes / 120C / Reverse speed 1. Transfer the rice to a serving dish, cover with the sauce and the chicken / prawns.
  • MARY BERRY LASAGNA Re-heat in the oven for 30 minutes.
  • EASIEST FISH PIE Re-heat in the oven for 30 minutes.
  • SPAGHETTI WITH CHUNKY BEEF RAGU Reheat the sauce in the oven or a pan. Cook 400g spaghetti as per packet instruction.
  • ONE POT CREAMY MUSHROOM PASTA Add the pasta / mushroom mix, 800g water, and 1 tsp salt to the Thermomix bowl. Cook for pasta cooking instruction + 3 minutes so if your pasta require 12 minutes cooking then time 15 minutes / 100C / reverse speed low. Add 180g Philadelphia, pepper, chopped parsley and mix gently. Serve immediately with grated parmesan.
