Rosemary lamb meatballs and roasted vegetables

This lamb meatball is a SLIMMING WORLD FRIENDLY THERMOMIX RECIPE inspired by yet another fabulous Gousto recipe (aff)

If you’re looking for a tasty, slimming-world friendly and quick family dinner, look no further than these delicious lamb meatballs.

This is a really tasty dish, that is so simple to put together, thanks to the Thermomix. It is also utterly perfect for the whole family on a busy weeknight. Who said slimming food had to be tasteless?

Lamb mince is mixed with fresh rosemary and garlic, then rolled into meatballs (get the kids involved – they’ll love it!). Ours were then steamed in the Varoma while some rice was cooking in the simmering basket and vegetables were roasting in the oven.

Another, less SW friendly alternative, would be to serve them with warm flatbreads, tzatziki, houmous, feta cheese, and fresh mint.

How about passing them around at a party with a side of minted yoghurt dip? You could even stuff them in mini pittas for a street food experience.

Another alternative would be to mix them with a flavourful tomato sauce and cook them al-forno!

As with all our recipes, these rosemary lamb meatballs are made from scratch so you know exactly what has gone into them.

Rosemary lamb meatballs and roasted vegetables
  1. Preheat your oven to 180C
  2. Peel and chop 4 carrots into batons
  3. Rince and slice 1kg potatoes
  4. Mix carrots & potatoes with a few sprays of Fry Light, a few sprigs of fresh rosemary and S&P to taste.
  5. Roast in the oven for 10 minutes.
  6. Add 3 garlic cloves and 20g fresh rosemary to the Thermomix bowl. Chop for 5 seconds / speed 5. Scrape down the sides.
  7. Add 60g wholemeal breadcrumbs, 2 beef stock cubes, 500g minced lamb and S&P to taste. Mix for 10 seconds / speed 5.
  8. Make up 12 meatballs (get the kids to do it)
  9. Top the vegetables with the lamb meatballs and return to the oven for a further 20 minutes.
  10. In the meantime, slice 4 tomatoes, dice the feta cheese and roughly chop the mint leaves.
  11. Serve all together with the flatbreads.
