KFC or Kentucky Fried Chicken is by far the UK’s most popular fried chicken restaurant. It has hit the headlines this week for all the wrong reasons: they’ve simply run out of chicken. Hundreds of its restaurants had to close because of problems with its chicken supplier. You simply could not make it up.

Panic no more. We’ve searched high and low. I believe we have come up with a pretty spot on Fingers Lickin’ Good KFC chicken Thermomix recipe. Even though the secret recipe for KFC fried chicken is still very much a mystery, this is a pretty good copy.

Some pretty big fans of the brand have had the hard job to try and taste it. This recipe is indeed very impressive and I  will definitely make it again.

For an equally crunchy and easy version with all the flavour of KFC yet with a fraction of the calories, bake your chicken pieces in the oven rather than frying.

Instructions
  1. Place all spices and herbs into the mixing bowl. Blitz for 10 seconds / speed 10. Repeat until you get a very fine grind.
  2. Add 260g flour and blitz for 20 seconds / speed 10. Set aside.
  3. Without rincing the bowl, add 250ml buttermilk and 2 eggs to the mixing bowl. Mix for 20 seconds / speed 4. Pour all over the chicken and leave to marinade at room temperature for 1/2 hour.
  4. Take the chicken out of the buttermilk mix, remove as much excess as possible. Fully coat each piece of chicken in the herb flour. Let it rest on a baking sheet for 30 minutes. Coat again, removing any excess.
  5. In the meantime, heat the oil in a large pan. You need enough oil to shallow fry your pieces of chicken. Fry about 4 pieces of chicken at a time for about 20 minutes, turning once after 10 minutes. Drain on paper towel. Repeat with remaining chicken.
Recipe Notes

For a healthier (but quite so KFC-like) version, turn your oven on 180C at step 3 and bake your chicken pieces for 20 mins, turn and bake for a further 20 minutes.
