Ok ok – I know we’re using buttermilk again… I just can’t get enough of the stuff at the moment. So so so good in so many ways.

Add to marvellous buttermilk, some scrumptious mushrooms and you end up with a combination made in heaven.

Oh how we love a good risotto. Pre-Thermomix, it was a bit of a faff though. This constant stirring, checking, adding … just too time-consuming in my busy family life.

Risottos are the single best reason to own a Thermomix right?! Thermomix owners are all nodding their heads.

Our Momo has certainly paid for itself just by the number of times I have made risotto in it. Combine pretty much any ingredients, chop a few bits for about 10 minutes, and then all the stirring is done for you. Really really full proof simple. You’ll suddenly find plenty of time to crack on with more important jobs like setting the table (I know, it was meant to be the teenager’s job here too!)

I had made enough to have leftovers for my lunch today… it was so good, I have nothing left to eat for lunch 🙁 but lots of happy guests 🙂

Just a word of warning though, a Thermomix risotto always looks quite soupy when it’s finished cooking. This is perfectly normal and the way it should be! Do not worry, it will be all right once you’ve let it stand for a few minutes and it turns into a lush, velvety pleasure.

Creamy mushroom risotto with parmesan and buttermilk
Instructions
  1. Place 40g parmesan cheese in the mixing bowl. Mix for 5 seconds / speed 10. Set aside.
  2. Add 1 onion, 150g mushrooms and 20 grams flat leaf parsley to the mixing bowl, with 20g olive oil. Mix for 5 seconds / speed 5. Scrape down the side and saute for 3 minutes / 100C / speed 1.
  3. In the meantime, slice the rest of the mushrooms up. Add to the mixing bowl, together with 200g white wine and 250g risotto rice. Cook for 3 minutes / 100C / Speed 1, without measuring cup.
  4. Add 450g vegetable stock and salt & pepper to taste. Cook for 15 minutes / 100C / Reverse speed low. The risotto will still be quite liquidy. That is normal at this stage.
  5. Add 60 grams buttermilk and reserved parmesan cheese. Stir with a spatula and leave to stand for 5 minutes.
  6. Serve hot. Enjoy!
